One meal I hate to admit that is not my favorite, is breakfast. It is one of the most important meals so I do make sure to try to start the day with a nice healthy start. I am normally a overnight oatmeal or Greek yogurt and granola type of girl, but I got this yummy recipe from my bestie Mrs. Peeps!
It is a great weekend breakfast or quick enough to make during the work week! So try out the Egg, Avocado and Salsa Scramble!
- 2 eggs or 3 eggs (egg whites only)
- 4 slices avocado
- 2 tablespoons salsa
- Salt and pepper to taste
- Olive oil cooking spray
- Spray a non-stick pan with cooking spray.
- Scramble eggs until cooked, season with a little bit of salt and pepper. Remove from pan and set aside.
- Top eggs with salsa, and avocado.
