Egg, Avacado & Salsa Scramble 

One meal I hate to admit that is not my favorite, is breakfast. It is one of the most important meals so I do make sure to try to start the day with a nice healthy start. I am normally a overnight oatmeal or Greek yogurt and granola type of girl, but I got this yummy recipe from my bestie Mrs. Peeps! 

It is a great weekend breakfast or quick enough to make during the work week! So try out the Egg, Avocado and Salsa Scramble! 


  • 2 eggs or 3 eggs (egg whites only)
  • 4 slices avocado
  • 2 tablespoons salsa
  • Salt and pepper to taste
  • Olive oil cooking spray


  • Spray a non-stick pan with cooking spray.
  • Scramble eggs until cooked, season with a little bit of salt and pepper. Remove from pan and set aside.
  • Top eggs with salsa, and avocado.
