Tough Love

I had a good laugh at work this week and it made me realize sometimes we need tough love.

Coworker: What are you doing?

Me: ughhh ( trying to finsh a donut my patient brought me) 

Coworker: Why are you eating that?

Me: I’m  bored

Coworker:  You know there is a treadmill over there that works great for boredom.

Wheww tough love. But she was 100% correct. I shouldn’t  give into unheathy habits out of boredom.

Sometimea a girl needs tough love. 

Back to prepping so I can get back on track.

Foodie Friday: BBQ Chicken Pizza

Ingredients:  Personal Pan size

Piza Crust ( I like thin crust or flatbreads)

1/2 cup BBQ sauce

1/3 cup shredded cheddar cheese

1/3 cup shredded mozzarella chese

3/4 cup shredded chicken

1 red onion ( Died or sliced to taste)

1 Tablespoon cilantro


Preheat oven as directions on Pizza crust or flatbread say.  On baking sheet place you pizza crust. Cover the crust with BBQ sauce.  Sprinkle both cheeses on the crust.  Mix together shredded chicken and remaining BBQ sauce and place on top of pizza.  Top with the onions and bake as directed by crust packaging.  Add cilantro and serve!


Workout Chaos

So my little ones are on summer break (which is coming to an end in 6 days), and they are no where near on a schedule! Everyone that knows me knows I like to keep the twins on a strict schedule. Sounds crazy, but when you have twins a schedule is what keeps you sane and allows you to get things done! 

So since school ended in June we have traveled and enjoyed every minute of our break, no schedules and they are a wild bunch! For me trying to get a workout in is hard when “nap time” doesn’t exist or waking up early isn’t an option because they are already sleeping in our bed makes it hard too! 

But as moms we do what we have to do! My double stroller allows me to get my runs in and my yoga time looks like this, surrounded by toys and little arms and feet…

As the summer comes to and end I will let my littles enjoy every minute! Soon school will start and I’m sure they will fall right back in their routine. So until then I will remember…”The days are long, but the years are short!” And I will enjoy every moment with the trio! 



Every year around Christmas time I create an Inspiration Board with all of my goals and aspirations for the upcoming year. I love making the boards and even recently got my oldest into the tradition!
Recently a friend asked me to create a Fitspiration Board for her while she goes on her fitness journey! Of course I’m up for the task (it’s reason for a trip to Hobby Lobby & Target)! 

She showed me a picture of what she had in mind and for the rest I went to Pinterest.

Here is a picture of the start of her board I’m working on it today and tomorrow and will post the finished product on our social media! Of course once I complete hers I’m making one for myself!

Simple Chicken & Rice

Since school is about to begin again and I need quick easy meals for my family I decided to highlight my simple chicken & rice…

  • 3-4 chicken breasts
  • Seasoning (I usually use whatever is in the cabinet)
  • 1 green bell pepper
  • 1 red bell pepper 
  • 1 yellow or white onion 
  • Brown Rice


  • Boil the rice (I like to use the 10min rice)
  • Season the chicken
  • Cook the chicken 
  • Mix in the veggies
  • Add rice & serve! 

It also is a great lunch meal prep! Happy Friday😘-E 


Ughhh I dont get injured often but i HATE it when I do.

Monday night I had an indoor soccer game and I  rolled my ankle… grrrr

I made it home and soaked in some epsom salt while performing ankle alphabets  for range of motion. I then iced with it elevated and went to sleep.  

Tuesday morning came and I Kinesiotaped for edema and went to work. Or limped in to work and the rest of rhe day.

Whelp, I’m  still tender and my limp is less now!

 I had big plans for workouts this week and I am bummed becuase I have not been able to do them. Resting my ankle and praying  for a speedy recovery becuase rhis girl has training.

Half Prep

So we officially signed up for the Disney Princess Half Marathon last week and granted the race is not until February, but a girl must prep!

So trying to figure out a running/training program is a big thing! At the Rock n Roll Half in San Antonio I bought a book called Train Like a Mother. It’s such a great book to read as a working mom who also wants to get in some “me” time! 

The book has all sorts of quirky quotes and advice on how to keep sane and enjoy yourself at the same time! They have 5k, 10k & Half Marathon running plans that mix it up on you!!!
