Buffalo Chicken- Blue Cheese Meat Loaf

This is one of my favorite recipies that is an alternative to buffalo wings. The recipe is from The Biggest Loser Family Cookbook

This makes 4 servings
Ingredients:

Olive oil spray

2/3 cup old fashioned oats

1/2 cup fat free milk

2 1/2 tablesppons buffalo wing sauce ( Franks is my favorite)

1 Lb extra lean ground chicken breast

1/2 cup finely chopped celery 

1/4 cup shredded carrot 

1/4 cup finely chopped sweet onion

2 large wgg whites, lightly beaten

1/4 teaspoon salt

1/2 cup crumbled reduced fat blue cheese

Directions:

Preheat  oven to 350°. Use olive oil spray to greese loaf pan. 

Combine oats and milk and stir. Let mixture stand for 3 min or until oats begin to soften. Stir in the wing sauce. Add chicken, celery, carrots, onion, egg whites and salt. Get your clean hands dirty and mix these ingredients! Add blue cheese and mix.

Place into the loaf pan and bake 30-40 minutes!
