Foodie Friday: Sopapilla Cheesecake Bars

So this post is not healthy at all! Since Santa will be visiting homes tomorrow night make these for him! 

Here is our favorite plate to leave for the big guy and his four legged crew! 

Sopapilla cheesecake bars are something I found on Pinterest once while recipe surfing. Turned out to be a hit among my friends, but only eat one because the calorie count is off the chart. Like I said let the little ones leave these for Santa.

Making them is simple you need…

  • 2 cans of cresent rolls
  • 2 packages of cream cheese (room temp)
  • 1 cup sugar
  • 1 tsp vanilla
  • 1/2 cup butter (melted)
  • 1/2 cup sugar
  • 1 tbsp cinnamon

Foodie Friday

Sometimes you just need those quick go to meals. Taco boats of become one of those meals for me.

Ingredients:

Ground meat (I like turkey)

Taco seasoning

Romaine hearts

Shredded cheese 

Sour cream

Guacamole 

Black olives

Directions:

Cook your ground meat and add taco seasoning . 

Place your Romaine hearts on plate as you would taco shells. Now fill with your favorite taco toppings!!

Foodie Friday: Cranberry Jalapeño Salsa

At my school the parents do what it called “Thankful Thursday”. This is where they bring the teachers goodies to eat! If you know anything about teachers you know they love to eat! 
Last week a parent brought Cranberry Jalapeño Salsa Cream Cheese Dip! I know sounds spicy and a bit weird (Texas!), but it’s not it’s actually quite sweet and yummy! I plan on making this for a Christmas party I am having! I found a great recipe here Cranberry Jalapeño Salsa!

Yummy Sunday Cornbread

Ok so it’s not Friday, but with Thanksgiving right around the corner I had to share my favorite Corn Cornbread recipe.

Never would I have added corn to my cornbread, until at work one year a parent made us some! After that I was hooked! Below is my favorite recipe. 

Ingredients:

  • 1 can whole kernel sweet corn (do not drain)
  • 1 can sweet cream corn
  • 1 package jiffy cornbread mix
  • 1/4 stick of butter (melted)
  • 2 eggs

Directions:

  • Mix eggs, cream corn and whole kernel corn together.
  • Add: butter and Jiffy corn bread mix, Pour into well greased 8×8 casserole dish.
  • Bake for 1 hour at 375 degrees.

Foodie Friday

This Foodie Friday is a little different.  I’m  not giving a recipie to try but I want to talk about a foodie find!

I hear over and over “abs are made in the kitchen”.

Well, the past 3 weeks I’ve  really buckled down on eating better trying new foods and making healthy substitutions. 

Recently on a Target run I found already spiraled zucchini noodles!

I decided to give them a try and surprisingly  fell in love!
Give them a try for an easy substitute for spaghetti. 

Foodie Friday: Taco Soup

I love football and fall! It means cooler weather and times call for chili and soups! Here is one of my favorite football season meals!!

Ingredients:

1 Lb ground turkey or hamburger

1 cup diced onions

1 (15.5 oz) can Ranch Style  beans

1 (15 oz) can corn

1 (15 oz) can Rotel

1 package taco seasoning

1 package ranch dressing mix

Corn chips

Sour cream

Shredded cheese

Directions:

Brown the ground turkey and onions in a large skillet. Add ranch dressing mix and taco seasoning to mixture. In large pan combine beans, corn and rotel and let it cook for 5 minutes. Add ground turkey mixture and let simmer over low 15 minutes.

To serve, place corn chips in bowl and ladel soup over chips. Top with sour cream and cheese!

Buffalo Chicken- Blue Cheese Meat Loaf

This is one of my favorite recipies that is an alternative to buffalo wings. The recipe is from The Biggest Loser Family Cookbook

This makes 4 servings
Ingredients:

Olive oil spray

2/3 cup old fashioned oats

1/2 cup fat free milk

2 1/2 tablesppons buffalo wing sauce ( Franks is my favorite)

1 Lb extra lean ground chicken breast

1/2 cup finely chopped celery 

1/4 cup shredded carrot 

1/4 cup finely chopped sweet onion

2 large wgg whites, lightly beaten

1/4 teaspoon salt

1/2 cup crumbled reduced fat blue cheese

Directions:

Preheat  oven to 350°. Use olive oil spray to greese loaf pan. 

Combine oats and milk and stir. Let mixture stand for 3 min or until oats begin to soften. Stir in the wing sauce. Add chicken, celery, carrots, onion, egg whites and salt. Get your clean hands dirty and mix these ingredients! Add blue cheese and mix.

Place into the loaf pan and bake 30-40 minutes!

Yummy Berry Pretzel Dessert

One of my favorite foods and my littles are fresh fruit especially berries! Try out this awesome recipe! 

Crust:

  • 3 cups miniature pretzel twists
  • 1/3 cup melted butter
  • 1/4 cup light brown sugar

Filling:

  • 16 ounces cream cheese
  • 1/2 cup sugar
  • 3/4 heavy cream
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon kosher salt

Topping:

  • 2 1/2 cups chopped fresh strawberries
  • 1 1/2 cups fresh blueberries

Directions:

  • Finely crush the pretzels.
  • Place the crumbs in a medium-size mixing bowl, add the butter and brown sugar and stir to combine. 
  • Press the crust mixture into the bottom of an 8×8 pan.
  • Combine the cream cheese and sugar.
  • Add the heavy cream, vanilla extract, and salt. Beat about 4 minutes. 
  • Pour over the crust and smooth with a spatula.
  • Top with berries. 
  • Refrigerate 2 hours 

Serving & Enjoy!
